Sensory profile

Green tomato leaf, wood, herbaceous. Firm bitterness and a pronounced peppery finish (oleocanthal). Recognisable even in blends.

Naturally high polyphenol content (300–800 mg/kg) gives Picual the longest natural shelf life of the major Spanish varietals. Ideal for own-brand programs shipping globally.

Harvest window

October to January in Andalusia. Early harvest (Oct–Nov) yields the most intense, peppery, high-polyphenol oil; later harvest is milder and higher yield.

Culinary fit

Excellent for cooking, roasting and dressings. Robust enough to stand up to grilled fish and red meat; balanced enough for finishing.
