Wholesale buyer's guide

How to source bulk lemon juice.

A practical guide for restaurants, bars, wholesalers and manufacturers evaluating Mediterranean cold-pressed lemon juice — specs, pack formats, cold chain and incoterms.

Why cold-pressed Mediterranean lemon juice

Lemons grown along the Mediterranean coast — Primofiori and Verna varietals from Spain, Femminello from Sicily — carry higher aromatic oils and balanced acidity than tropical hybrids. Cold-pressed extraction below 25°C preserves limonene, citral and vitamin C that thermal processing destroys. For cocktail bars, patisseries and clean-label brands, that translates into brighter flavour and shorter ingredient lists.

Specs that matter for HoReCa buyers

Ask for total acidity (target 5.5–7.0% as citric), Brix (7–9°), pH (2.2–2.4) and pulp content. NFC (not-from-concentrate) juice is the benchmark for premium bars and restaurants; concentrate reconstituted 1:5 works for industrial applications. Request a COA per lot covering microbiology, pesticide residues (EU MRL) and heavy metals.

Certifications buyers expect

IFS Food, BRCGS, HACCP and EU Organic are the standard passports for retail and foodservice. Kosher and Halal are commonly requested for export. For Nordic and DACH buyers, sustainability and carbon footprint documentation is increasingly part of tenders. Ask for lot-level certificates, not just brand-wide letters.

Pack formats and MOQ

HoReCa foodservice runs on 1 L PET and 5 L bag-in-box for easy dispensing. Retail formats sit at 250 ml and 500 ml glass. Industrial buyers work with 200 L aseptic drums or 1,000 L IBCs for beverage, sauce and confectionery lines. At NostraMareFoods, pallet MOQs start at 5–10 pallets and scale to full 20 ft or 40 ft container loads.

Cold chain, logistics and incoterms

NFC juice ships refrigerated (0–4°C) with a 9–12 month shelf life; aseptic packs travel ambient with a 12–18 month shelf life. For EU buyers, DAP or DDP from our Sevilla and Valencia hubs is fastest. Intercontinental orders typically ship FOB or CIF from Valencia, Rotterdam or Hamburg. A 20 ft reefer container fits about 20 pallets of bag-in-box.

Arrival QC and storage

Check seal integrity, temperature loggers on reefer shipments and lot codes on delivery. A quick sensory check — bright yellow colour, clean citrus aroma, no bitterness — flags oxidation or mishandling. Keep a retained sample of each lot for traceability. Good suppliers replace any lot that fails your arrival QC without pushback.
